Mr. Smith,

I wanted to touch base with you regarding the assignments. I have been doing all of them, however not entirely in the week mentioned on the due dates. It did not seem as though these due dates were firm, but more so a guideline. Is this correct? I hope to be all caught up this week and have this weeks assignments due by Thursday and I plan to stay caught up. I just wanted to verify that I was still receiving full credit for everything I was turning in.

There's no deadline for getting credit, but there is a deadline (end of the semester) for completing the course. There is flexibility within that deadline. But of course you don't want to fall progressively further and further behind.
