• During the half-second before the pilot has time to react to the gust, does the airplane speed up, slow down or maintain constant (or very nearly-constant) speed?

The plane would slow down. The wind gust is working against the direction the plane is going, so it would counter the plane’s forward motion.

• Does it veer a bit to the right, a bit to the left or does it continue traveling along a straight line?

The plane would veer a bit to the left. We can look at the plane as traveling at a 135 degree angle counterclockwise from the positive x-axis, and the wind at 150 degrees counterclockwise from the positive x-axis. I would assume the plane would end up somewhere between these two angles, so a bit to the left of the original angle.
