The cannonball seemed to accelerate upward in the beginning, slow down at the top of the curve (apex), then speed up again approaching the ground/target.

It seems that the horizontal remains constant. I'm a little fuzzy on this vector

The cannonball does speed up until it leaves the cannon.

Then the acceleration is purely downward, due to only gravity.

You are correct that it doesn't change velocity in the horizontal direction, the reason being that there is no significant force which acts on the cannonball in this direction.

The downward acceleration slows the cannonball until it comes to rest for an instant, after which is speeds up as it descends. All this occurs with no change in horizontal velocity.
